Super Easy Tofu Avocado Toast
Is there anyone who isn’t a fan of avocado toast? Rich, creamy, ripe avocado is EVERYTHING on a slice of warm toasted bread.
Unless, that is, you’re not so into bread.
Fresh baked bread is pretty money, but I don’t love the way it tends to make me feel sleepy and sluggish.
So I was pretty excited to find this easy tofu avocado toast variation on PopSugar. It’s simple, and is like a business class upgrade to the usual bread base. Tofu is high in iron, calcium and the wonder-mineral magnesium, not to mention protein, making it a far better source of nutrients for our beloved friend the avocado, especially if you’re enjoying a plant-based diet.
What’s even more awesome is all of the potential this tofu base creates for more open-faced sandwich options. You could use it as a bottom for spreading with our super simple chickpea olive smash. Add some greens to dial up the iron, magnesium and antioxidants even more.
You could also use the tofu base as a support for sundried tomatoes, or other antipasti vegetables. Use it as a home base for hummus, whether you like it made the traditional way or with edamame. It would probably be best to avoid trying it for your PB&J though, but if you go that way, let us know how things turn out.
PopSugar knows where it’s at and suggests using Trader Joe’s High Protein Extra Firm Tofu and Everything But the Bagel seasoning to make this. I followed their advice and it was fantastic. If you’re not blessed with a TJ’s store near you, don’t let that hold you back. Just find some extra firm tofu and try it out for yourself.
I made myself two slices of avocado tofu toast, and it kept me going ALL DAY. I didn’t feel overstuffed after eating, but when hours went by without me feeling hungry, I knew this was something I had to share. If you run busy, try this dish to fuel an awesome day.
High-heat oil (like avocado oil)
Extra firm tofu
Avocado, flesh scooped
Himalayan sea salt
Fresh chopped or sundried tomatoes (optional)
Handful of fresh kale or spinach leaves
Trader Joe’s Everything But the Bagel seasoning (or seasoning of your choice)
Cut the extra firm tofu in half so that you have two big blocks of tofu, then cut those halves in two again so that you have six slices. Sautee the slices in high-heat oil, letting them, brown and crisp on both sides.
While your tofu is frying up, make your avocado smash spread by mixing your avo with some salt to amp up its flavor.
Once the tofu is ready, place your greens on top, then add the avocado spread. Top with tomatoes, if using, then sprinkle the seasoning on top. Grab your fork and knife, and ENJOY.
Keep the unused tofu slices in the fridge for future deliciousness, and toast them up for a few minutes to warm before serving.
